Spelt, an ancient grain with numerous nutritional benefits, has seen a resurgence of interest in recent years due to its unique flavor and exceptional nutritional value. At the Biscuit Factory of Provence, we've decided to share with you our secrets for successfully cooking this delicious grain and offer you some tasty recipes.

Our Preparation Tips for Cooking Spelt

Spelt is a grain that requires a bit of preparation to fully appreciate its flavor!

Soak the spelt in water for several hours (15-20 hours) to obtain digestible and flavorful grains that will take less time to cook.

To ensure optimal cooking, we highly recommend rinsing your spelt. Like rice, this grain requires rinsing to remove impurities. Let it drain.

Two tricks that will help you achieve perfect spelt cooking

Tips for Cooking Spelt

Now let's move on to cooking the spelt. To achieve perfect cooking, you'll need a ratio of 2 to 2.5 volumes of water to 1 volume of spelt. Several cooking methods are available to you: stovetop or in a pressure cooker (follow the recipe it provides).

If you choose to cook it on the stovetop, start by bringing your water to a boil, then cook the spelt for 10 minutes. Then, drain it and let it rest for 10 minutes so it can continue to swell.

Two delicious spelt-based recipe suggestions

The biscuit factory has selected two delicious recipes based on spelt for you to try:

Sauteed Spelt with Vegetables:

To prepare the sautéed spelt with vegetables, start by following the cooking instructions for the spelt.

Meanwhile, in another pan, heat olive oil over medium heat. Add the minced onion and chopped garlic, then sauté until golden and fragrant. Next, add the diced bell pepper and zucchini previously cut and sauté until they begin to soften slightly. Add the halved cherry tomatoes and cook for about 2 minutes. Finally, add the cooked spelt and mix well. Your sauté is ready to be served.

Ingredients:

  • 200g spelt
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 onion, minced
  • 2 cloves of garlic, minced
  • 200g cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

Spelt Pilaf with Tomato and Burrata:

In a saucepan, heat olive oil and sauté the onion and garlic until golden. Then add the diced tomatoes and tomato paste, then cook for a few minutes. Stir in the spelt and lightly toast it. Be sure to carefully follow our preparation tips to ensure the success of your dish ;)

Pour in the vegetable broth, bring to a boil, then reduce the heat and simmer for 25-30 minutes until the spelt is tender and the liquid is absorbed. Season with salt and pepper to taste.

Serve hot, with basil leaves and a beautiful burrata. Bon appétit!
