Calissons are a Provencal specialty, made from a base of finely ground almonds, mixed with sugar and candied fruit. Their square shape, characteristic of Calissons Petit Duc, and their melt-in-the-mouth texture make them a refined confection appreciated by all. The fruit jellies, meanwhile, are made from ripe, juicy fruit, cooked slowly to preserve their natural flavor.
Before the time of manufacture, at the end of the 19th century, sugar was a rare commodity, used with reserve. We followed the same principle during the hours we spent studying recipes from before the calisson d'Aix, to finally arrive at our Calisson de Saint-Rémy... low in sugar, extremely soft and with a delicious almond taste.

Ingredients : sugar, almonds, apricot and orange pulp from Provence, melon glucose-fructose syrup, lavender honey from Provence, blueberry pulp, William of Hautes Alpes pear and raspberry, orange peel, eggs, sucrose, hosts (potato starch, vegetal oil), lemon juice, gelling agent (pectin) acidifier (citric acid), natural aromas of Bourbon vanilla, raspberr, blueberry and apricot.
Made in a workshop using milk, other nuts and gluten.
