Lemon curd recipe

  • 90g butter at room temperature
  • 1 tbsp poppy or chia seeds
  • 2 to 3 small meringues

The preparation

Take the juice of the 2 lemons and the zest of one half or one whole lemon (without the white part).

 

In a bowl, beat the eggs for a few moments. Add the lemon juice and zest, butter and sugar. Whisk everything together.

 

Heat the mixture in a bain-marie over low to medium heat, stirring constantly for about twenty minutes. The cream should thicken and coat the spoon.

 

Leave to cool to room temperature.

 

Garnish the tops of the macaroons with the lemon cream. Sprinkle with seeds and add small pieces of meringue. It's ready to eat !
